Nick,

So, it seems train tickets are now about the same price as
flying. I would much rather spend less time traveling, and more
time enjoying my destination. Also, I'm not retired, so adding
2-3 days each way just for travel time is out of the question.

The problem now is with the partial government shutdown, and many
TSA agents retiring or quitting, you have LONG WAITS of at least 5
hours in some cases. I'm waiting for the point when the whole slew
of them quit, because of lack of pay (the politicians are more
interested in appeasing their political base than their overall constituents)...and that shuts down the security checkpoints, and
all of the airline flights.

You know darn well the public, the airlines, and the travel industry
won't stand for that. The phones with the Congressional offices will
be lit up like a Christmas tree.

I've had absolutely no issue with TSA over the years,
whatsoever. Read the rules of what can go in your carry-on
bags, and what needs to go under the plane, and you likely
won't have any issues.

I have that TSA Pre-Check program that I'll renew toward the end
of the year. But, on a pre-birthday splurge trip to Huntsville,
Alabama, in August...I'm taking the bus. I got a good deal on the
bus, and the hotel from AARP. It'll give me a few days away from
things, and a chance to meet my FIDONet hub, Marc Lewis.

As a side note, in the Huntsville area, there is an "All You Can
Eat Buffet", known as "88 Buffet". They offer Asian, American,
Hibachi, Sushi (we call that "bait" in America <G>), and Seafood.
A fellow ham radio operator said "if you make the trip, I will buy
your dinner Friday night. So, I'm going to really indulge myself.

For foods that need to stay frozen, I'm pretty sure there are trucks where the cargo area is basically a big freezer.

I believe flash-freezing also has other benefits, such as avoiding moisture accumulation (particularly if it's vacuum-packed immediately afterward), etc..

Good point - I have done that, both here in the USA and in Japan.
Didn't have any problems either. I would guess those plates are not "in circulation" all that long before they either get claimed or removed
from the train by the operators after a certain time period.

I went to a sushi boat restaurant in San Francisco recently for the
first time since my kids were young.

There was a plate of uni that went around the whole time we were there, unchosen...

It just occurred to me that they probably keep the water chilled to
keep the sushi fresh(er).

Spacemen", with Nathan Fillion and Alan Tudyk) and their guest was
talking about having chicken sashimi in Japan while on location.

I suppose, if you treat raw chicken as meticulously as you do sushi,
